Cooking it up

Recently I have found that the same old foods we are used to eating are getting boring. I have been trying a lot of new recipes lately in an attempt to freshen up our dinner menu. Occasionally I end up with something that none of us like, but this one is just flat amazing.

mozzarella stuffed meatballs

 

Mozzarella Stuffed Meatballs!!!

Ingredients:
1 lb ground beef
1 lb ground pork or mild Italian sausage
1 cup breadcrumbs
1 TBSP Italian seasoning
3 eggs
3 garlic cloves, minced
1 tsp salt
1/2 tsp pepper
1/2 lb mozzarella, cut into cubes
Olive Oil
Marinara (jar or homemade)

Directions:
In a large bowl mix beef through pepper. Form into 2″ balls. Press a cheese cube in the middle and seal the meat around it.
Heat 1/2″ olive oil in a large skillet. Brown meatballs and then set aside on plate.

Pour marinara sauce into pan; bring to a simmer. Add meatballs and simmer until cooked through, about 30 minutes.
Serve over spaghetti or on top of a hoagi!!

 

Labor Day weekend

How was your Labor day weekend. Ours was fabulous. We spent time with family and friends at BBQ’s and out on the water as well one day boating. The kids had a blast learning to waterski and water board. We found a great spot to BBQ on an island in the middle of the river as well as play some volleyball in the water. By the time the weekend was over, we were all slightly burnt (even though we used lots of sunscreen) and totally beat. I guess you can say we played hard this past weekend.

 

Bucket list

Do you have a bucket list? Ever since the movie came out people are always telling me what is on their bucket list. I have a few things and have had to remove one or two over the years.

  1. Dancing ( a waltz) with Sean Connery.  I mean what woman wouldn’t want to do that?
  2. Skydiving. Personally I think this is on just about everyone I know list.
  3. Travel around the world. Not sure how that is going to work out as it is a little dangerous to travel right now.
  4. Attend a Hollywood A list party. Okay meeting all your favorite entertainers would be fun. Admit it.
  5. A cruise and or deep sea fishing. I have never been out on the ocean only to the beach.

What’s on your bucket list?

She finally picked one

Well she finally picked a novation for her keyboard. I didn’t think she was ever going to figure out what she wanted. Oh wait, I am talking about my daughter, who has the most difficult time making up her mind about anything. Trying to buy her stuff is such a pain because she insists on picking everything out herself and then takes ten years to do it. Well not exactly ten, but you get the picture.

My new motto

I think I am going to adopt this as my new motto. My friends and family might think I am crazy or have totally lost it, but hey, who cares. I am going to be positive from now on no matter what. I don’t care what life throws at me, I plan on weathering the storm with as much calm as possible. I think it is a better way to be then to get upset all the time.

Telling me all about it

My son is so excited about his new job, that he comes home and tells me every little detail. Last night he was telling me about the chainsaws that his uncle bought from www.sherrilltree.com. He says they are the best chainsaws ever built and work so good that they cut through the toughest trees. Well I am glad that he is so excited about this and equally happy that he is taking an interest in everything about it in order to learn more. It is just great that he is happy even though it is a tough job working out in the sun and heat like that.

I know a lot of men who wouldn’t be able to handle it. While I know that he is interested in the chainsaws and such, he is not allowed to run one, before you ask. The extent of his cutting is with a small hand saw or hatchet to help make everything fit into the trailer. I trust his uncle implicitly and know that he would never allow him to do anything like run a chainsaw at his age. Maybe in another couple of years when he is like 16 or so, will he teach him how to do that, but not now.

Summer job

So my 14 year old got a summer job working with his uncle. His uncle has a tree cutting service and needed help loading branches and stuff onto a trailer. It doesn’t pay as much as I would like but my son says he doesn’t care since he is making money. He is working to buy something, although I am not sure what as he won’t say anything other than there is something he wants to buy. At least he is working towards it on his own. I can’t wait to see what it is though.

Need a limo

Okay so I flew down to Tampa to spend a couple of days with an old friend and go to a concert. We decided to find a st petersburg fl limo service to take us to and from the concert. We planned on drinking at the concert and no one wanted to be the designated driver, so we hired one. We had a blast at the concert and were responsible as far as driving goes. Yay for us!

Interesting

I was looking through the site to price the kids instruments for this year and found this. It is a korg ms-20 mini. I have no clue what it does, but seriously there are way too many knobs on it. How to people come up with stuff like that? What could you possibly need that many knobs and ports for on a “mini”. I don’t know, but I am guessing that my kids might.

Great Movie

I don’t know if you have ever heard of this movie before, but I hadn’t. I only recently found and watched it and I was entranced. The movie is called Nell. It has Jodie Foster and Liam Neeson in the starring roles. The movie is about a hermit girl found living deep in the woods. When her mother is discovered to have died, she is found. No one knew that she existed so were completely taken by surprise by her appearance. Since her mother had suffered a stroke long ago and talked funny, Nell talked funny as well and they had to decipher her words to figure out what she was saying. There is of course much more to it than that, but I don’t want to spoil it for you. Watch it and see. It was a really great movie.
