Late night dinner for two

Last night was a great night. Once I got the kids fed their dinner (pizza), bathed and down to bed, I started cooking dinner a Deux. My man had to work really late and I knew that I wouldn’t sleep until he got in, so I figured we could have a nice relaxing dinner on the patio for just the two of us. I made Grilled chicken Asiago with cheese tortellini, a tossed salad and Italian seasoned bread. A nice bottle of chilled white wine and some candles and I was set.

We really enjoyed the time alone and he was very impressed with our dinner. It was actually easier to make then you would think, but we won’t tell him that. I tell you, it was long over due for some quality alone time. If you haven’t done it yourselves lately, take a page from my blog and go for it! You won’t be disappointed.

If there’s a will, there’s a way

I have been wanting to take my kids to Orlando to go to Disney and the rest of the parks for a long time. Since it is a long trip and expensive, I want to do as many parks as possible and really get my money’s worth. To this end, I started a savings account a few years ago and have steadily put money into it a little at a time. I have it taken directly out of my paycheck when it is direct deposited and don’t check the account all that often. Until today. I was surprised at how much money is in the account.

I realized that we can do our Disney trip this year. I am so happy about this. I haven’t told the kids yet, because I am trying to figure out how to get them down there without them knowing where we are going. This is a little tricky. I may be able to get my parents involved and see if they would like to go as well. We could take their Winnebago and leave at night. Since it is only a twelve hour drive, we can be there by morning and the kids would wake up as we pull in to the Disney camp grounds. I know that my mom would love it, but my father hates to drive at night. Further more, he doesn’t like anyone else to drive his rig, or my boyfriend and I could help by taking shifts. I am going to call mom and have her start working on dad right away. I really want to surprise the kids. It would be just awesome!

Fashion and me

I have a problem with high fashion because it doesn’t have anything for the everyday woman. Although, more and more we are seeing full figured women modeling clothing for women who have had a few kids and still want to be stylish. The big fashion magazines haven’t really caught on yet, because I rarely see a model on the front cover that I can relate with. Consequently, I don’t buy those magazines. I cannot figure out why they don’t understand that there are more of us full figured women then there are skinny ones. We spend more money per year then the other demographic does, so why do they keep ignoring us? This woman is tired of not being represented by the fashion moguls. Get with the program people, we are here and you are losing money by not serving our needs.

Common core

I really don’t like the new common core curriculum they have for the kindergarten and first grades now. Even with preschool, the children are ill equipped to handle this much work this soon. Since each child moves at their own pace in the beginning, many are just left behind and have to repeat the grade. This is really not good for self esteem at such a tender age. Kindergarten is to prepare children for school by having them in a full day agenda with all of the normal school activities. I am seriously disappointed in the school board for allowing this. You wouldn’t believe how many of the kinder’s are being held back. smh…

Ah the joys of parenthood

While having children is a lot of fun and very rewarding, every now and then all you can do is shake your head. Kids tend to do stupid things, but my son just won the award for the dumbest thing for the year. Maybe the dumbest thing ever. He actually took his pocket knife to school. Grrrrr….he said he forgot it was in the back pack, but seriously, he should have checked his stuff before he walked out the door. Fortunately he goes to a school that knows him well and was understanding. I am happy that they did not enforce the “no tolerance” rule. He is happy that he didn’t end up in juvenile court. Lord save me from my kids! smh….

This is Lance’s Song. It is one of those songs that make you cry as you think of that person that or you lost to the Big Man in the Sky…I have at least five people who this song reminds me of. I wish it was otherwise, but we have all been there in one way or another.

Home energy audit

I think I will stop blogging

I have had enough. I am tired of doing this everyday and people just don’t pay attention. There are so many other bloggers out there that finding a good following is just too difficult. April fools
Happy April Fools Day!

Made the reservations

My boss is going to the middle east on business. I just finished making the reservations for his flight on saudi airlines to Dubai in the United Arab Emerates. This is one of the most amazing cites on this planet. Built on the water with architechtural buildings that will make your jaw hit the floor. I really wish that I could go with him, but alas it will not be possible. He needs me to stay here and keep this place running for him while he is gone. I am apparently the only one who can keep everyone working at normal pace when he is out of town. If he leaves anyone else in charge, nothing gets done.

No matter, he has promised me that if I train up someone who can handle things, then I can go on the next trip. That is of course if this trip goes well for him. If it does, our company will be growing by leaps and bounds and I will be able to hire some really good staff to handle this office.

I do have someone in mind and there is also the possibliliy that someone from Dubai will be coming here to act as a liason in our office. That will help me siginificantly. An outsider in this office will help to whip the current staff into shape, or I will let a few of them go. We are moving into global business and stragglers will be left behind. Anyway, I have much to do to prepare for his trip and have to go. Have a great day!

Hamburger stew

I have a great recipe that is easy peasy to make. I thought I would share it with you guys.

You will need;

  • 1 lb of ground beef
  • 1 large bottle of V8
  • 5 medium potatoes (peeled and cut into bite size pieces)
  • 1 can of green beans
  • 1 can of corn
  • natures seasoning
  • Tony Chechares Creole seasoning
  • garlic
  • half an onion (chopped)

Brown the ground beef in a large pot and drain. Add all of the other ingredients (including juice from cans of veggies). Cook on meduim heat for at least an hour, until the potatoes have softened and the stew has thickened up some. It doesn’t get really thick, but it is amazing.

 

Top with parmesean cheese and serve. Tastes great!
