Wedding favor boxes

Wedding favor boxes versus bags. That is the question right now. We have been unable to decide on what ones she wants. We have looked and looked, but unfortunately nothing has really popped out at us saying “this is it!”. So we keep looking and hopefully we will find something she likes soon.

In the mean time, we have picked out a lot of the other stuff. We just cannot order some of it until the boxes versus bags is solved. We have to make sure that everything will fit first. It’s not like it is much really, but we have to be sure.

I love how nature can make the most beautiful scenery. This purple water fall and trees around it are just amazing. The wonder of nature never ceases to amaze me. I hope that you guys enjoy the pictures I post for you. I do try to find really good ones.

Unity Candle Ceremony

This Unity Candle Ceremony is going to be so pretty. I love the symbolism of it. There is so much more to do in planning. I am so busy with everything, I don’t know whether I am coming or going. Life always get so hectic at this time of year too. I have to look up the venue and get the address. I need to go check a few things out over there, so I know what I will be doing decoration wise. That way I can have a plan in my head, ahead of time. I may even draw out the floor plan and such to make it easier. I shall have to see.

Lots of work

I have lots of work to do and I have been having a little trouble keeping up with it. For some reason this computer is running really slow an making it very difficult to work. What used to only take minutes, takes four to five times longer and I am getting way behind. Add to that everything else I have going on in my life and the holidays to boot…well I guess you can see where this is going.

I am sure that I will eventually catch up, but it sure is annoying to have to work at this pace. I like to get things done quickly and move on to the next project.

Wedding guest book

The wedding guest book has arrived. I have put aside certain containers for storage of all the wedding stuff as it comes in and is assembled. The containers all have lids to keep it safe from kids and pets as well. I always keep containers for camping or boating. They always come in handy for other things as well. This time for a wedding.

I have a few things to go over tonight on my lists. I have a ton of lists for so many different things, that I had to start a binder for it all. It has helped immensely to organize it in this manner. Each section is dedicated to what is needed, how many has been ordered and how many come in, etc… Planning is what I do best!

Dog sitting

I absolutely hate it and will never do it again. This dog is not remotely house trained and I have spent half the day cleaning up it’s messes. There are spots all over my carpets too. I have half a mind to charge them for the cleaning service I have to get now. I will NOT allow this to stay in my carpets. My kids play all over my floors and just the thought of it is driving me crazy already. NEVER AGAIN!

This always happens to me when I try to help people. Tomorrow morning I have to call the carpet cleaners and make the appointment for the day after this dog is leaving. Stupid, stupid, stupid is what I am.

Deal dash

I found an article on DealDash that tells you just what it is like to shop on their site. They give an amazing over view of the company and how it is almost like a game to be played. The DealDash Review also tells you what to do, to be successful on the site.

I think Deal Dash makes shopping online a lot more fun and bidding is easy. I have a few things that I am keeping an eye on right now. I am hoping that I win the auction for my bids. Check it out and see if you like it, because it never hurts to give it a try.

Eggplant Ricotta Bites

I found this on the Food Network recipes and I am making it tonight. I though I would share it with you guys so you could give it a try too. Now I have to go shopping.

Ingredients
1 medium eggplant
Kosher salt
All-purpose flour, for dredging
2 large eggs
3/4 cup breadcrumbs
1/4 cup grated Parmesan cheese
1 tablespoon plus 2 teaspoons extra- virgin olive oil, plus more as needed
2 large plum tomatoes, diced
2 teaspoons red wine vinegar
1 cup ricotta cheese
Shredded fresh basil, for topping
Directions
Thinly slice the eggplant into rounds and season with salt. Pour some flour into a shallow dish. Beat the eggs in another dish. In a third dish, mix the breadcrumbs and Parmesan. Dredge the eggplant in the flour, then dip in the eggs and coat with the breadcrumb mixture.

Heat 1 tablespoon olive oil in a large skillet over medium heat. Working in batches, cook the eggplant until golden, about 2 minutes per side, adding more oil between batches, if necessary. Drain on paper towels and season with salt.

Toss the tomatoes with the remaining 2 teaspoons olive oil and the vinegar in a bowl. Spoon some ricotta onto each eggplant slice. Top with the tomato mixture and basil.

Green printing

The green printing I found recently really has me happy that there is another company taking responsibility for the carbon foot print they leave behind. Using recyclable products is also a great way to help the environment. My kids are always trying to think up ways to be more green. They learn so much about it in school these days that you cannot help but become and advocate for green living.

We even have our own compost bin to use for our garden. There are separate bins for plastics, aluminum, glass and paper. The kids have become fanatics about making sure the right product is in the right bin. The boys always help take them out to the road on pick up day too. I never have to ask them. It is really great!

Painting
Absolutely Beautiful

This is actually a painting, not a picture taken with a camera. The painter has amazing vision. The realism alone renders you breathless, when you realize that it has been painted by hand. I cannot imagine such talent. I have a child who loves to draw and paint. I encourage him all the time. Maybe one day he will be this good. A mother can only hope.
