{"id":8,"date":"2008-06-12T16:23:28","date_gmt":"2008-06-12T21:23:28","guid":{"rendered":"http:\/\/aprilmichele.com\/?p=5"},"modified":"2008-06-12T16:23:28","modified_gmt":"2008-06-12T21:23:28","slug":"summer-squash-recipe","status":"publish","type":"post","link":"http:\/\/worpal.com\/aprilmichaels\/2008\/06\/12\/summer-squash-recipe\/","title":{"rendered":"Summer Squash Recipe"},"content":{"rendered":"<p>I found a great summer squash recipe that has become a favorite here too.\u00a0 It&#8217;s a New England Summer Squash casserole type dish.\u00a0 I thought you might like to give it a try.<\/p>\n<ul>\n<li style=\"text-align: center\">2 pounds (about 6 cups) of Yellow Squash<\/li>\n<li style=\"text-align: center\">1\/4 cup chopped Sweet Vidalia Onion<\/li>\n<li style=\"text-align: center\">1 can Cream of Chicken Soup<\/li>\n<li style=\"text-align: center\">1 cup Sour Cream<\/li>\n<li style=\"text-align: center\">1 cup shreaded Carrots<\/li>\n<li style=\"text-align: center\">1 8 oz Herb Seasoned Stove Top Stuffing mix<\/li>\n<li style=\"text-align: center\">1 cup melted butter<\/li>\n<\/ul>\n<p>Boil Squash and onion for 5 minutes and drain. Combine chicken soup and sour cream. Stir in shredded carrots. Fold in squash and onions. Combine stuffing mix and melted butter. Use a 12 x 7 casserole dish.
